On the wild and spectacular plateaus known as the Grands Causses, not far from the old Templar roads, in the Midi-Pyrénées region of France (South West), milk from the ewes of the Lacaunes breed and specific strains of Penicillium Roqueforti combine to produce Roquefort, a rich and savory cheese also known as “the King of Cheese”. Roquefort Société is aged for 3 months or more in the natural limestone caverns of the Combalou Mountain overlooking the tiny village of Roquefort-sur-Soulzon.
Roquefort Caves Baragnaudes has an ivory-colored paste with emerald-green veins, a creamy, moist texture and a rich, intense, and somewhat salty flavor.
