Premium Signature Angus Center-Cut Back Ribs consist of the 6th through the 12th ribs. It is produced from the primal 3x4 rib after it has been boned. Product must have a minimum of 1.5 inches on the chuck end rib and cannot be more than 1.5 inches out of square at each end.
