Asian Chicken Lettuce Wraps
No need to order take-out tonight! These Asian Chicken Lettuce Wraps make a great low-carb dinner that the whole family will enjoy!
Prep Time: 10 minutes
Cook Time: 15 minutes
Total time: 25 minutes
Yield: 4 servings
Ingredients:
- 3 Tbsp. hoisin sauce
- 2 Tbsp. Harris Teeter Low-Sodium Soy Sauce
- 2 Tbsp. seasoned white wine vinegar
- up to 1 Tbsp. Harris Teeter Sriracha, to taste
- 1 tsp. HT Traders Toasted Sesame Oil
- 1 Tbsp. Harris Teeter Vegetable Oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 Tbsp. grated ginger
- 1 lb. ground chicken
- 8 oz. HT Traders Diced Water Chestnuts, rinsed and drained
- 2 green onions, sliced
- Salt and pepper to taste
- Romaine or iceberg lettuce, leaves separated, for serving
Directions:
- Whisk together the hoisin sauce, soy sauce, rice vinegar, Sriracha (if using), and sesame oil and set aside.
- In a large skillet, heat oil over medium high heat. Add the white onion and stir fry until soft, about five minutes. Stir in the garlic and ginger and cook for another minute.
- Add the ground chicken and cook, breaking up the meat with a spoon, until cooked through.
- Pour in the sauce and cook for two minutes more, until slightly thickened. Turn off the heat and stir in the water chestnuts and sliced green onions. Taste and season with salt and pepper, if needed.
- Scoop chicken mixture into prepared lettuce wraps and garnish with additional Sriracha, if desired.
Broccoli Cheddar Soup
This soup is easy to make at home, plus you can enjoy it in your PJ’s! Serve this Broccoli Cheddar Soup in a bread bowl or with your favorite crusty bread for a cozy dinner recipe.

Ingredients:
- 3 cups chopped fresh broccoli florets
- 1 cup thinly sliced carrots
- ½ cup diced onion
- 3 Tbsp. Harris Teeter Salted Butter
- 3 Tbsp. Harris Teeter All-Purpose Flour
- 3 cups Harris Teeter chicken Cooking Stock
- 1 ½ cups Harris Teeter Half & Half
- 8 oz. Harris Teeter Cheesy Melt
- 1 cup Harris Teeter Shredded Mild Cheddar
- ¼ tsp. Simple Truth Organic Ground Mustard Seed
- Salt and pepper, to taste
Directions:
- In a large soup pot, melt the butter. Add the onion and cook over medium heat until softened and lightly browned, about three minutes. Stir in the flour, until no white bits remain.
- Add the broth and half and half to the pan, whisking until the mixture thickens, about 7-8 minutes. Reduce the heat to a low simmer, then add broccoli and carrots. Cook for another 10 minutes.
- Stir in the cheeses, mustard and season to taste. Cook, stirring often, until smooth and the cheese is well incorporated, another 5 minutes or so.
- Serve with warm sliced bread, if desired.
