Instant Veggie Ramen
Meal prep is made easy with this totally vegan instant ramen jar recipe! Enjoy these at home or on the go for a satisfying noodle dish loaded with your favorite veggies.

Yield: 2 jars
Ingredients:
- 14 oz. vacuum-packed ramen stir fry noodles
- 2 green onions, chopped
- Pickled ginger, to taste
- 6 oz. sautéed shiitake mushrooms
- ½ cup shredded carrots
- ½ cup frozen peas
- 2 Tbsp. Harris Teeter Soy Sauce
- 2 Tbsp. HT Traders Toasted Sesame Oil
- 2 vegetable bouillon cubes
- Boiling water, for serving
Directions:
1. Divide ingredients in half and layer in two mason jars. Seal and refrigerate until ready to prepare.
2. To serve, add boiling water to just cover the ingredients. Allow to rest four minutes before enjoying!
Thai Curry Noodle Soup
Just add boiling water! With a spiced coconut broth, our Thai Curry Noodle Soup is crave worthy! If you’re not a tofu fan, simply substitute it for shredded chicken or cooked shrimp.

Ingredients:
- 3 ounces dry rice stick noodles
- ½ cup kale ribbons
- ½ cup shredded carrots
- 1 cup cooked tofu, cubed
- 2 green onions, sliced
- 2 tsp. Private Selection Thai Red Curry Powder
- 2 tsp. vegetable oil
- 2 tsp. Harris Teeter Soy Sauce (or tamari)
- 4 Tbsp. coconut cream, such as Thai Kitchen
Directions:
1. Place the dry stick noodles in a bowl and cover with hot water (not boiling) for five minutes or until just softened. Drain and rinse in cool water.
2. Layer noodles and remaining ingredients in two jars. Seal and refrigerate until ready to use.
3. To prepare, pour boiling water in each jar until noodles and vegetables are just covered. Allow to stand for five minutes, then enjoy!

Directions:
